dinner for friends on a 'lost' night :) chickpea cutlets from veganomicon, saffron-garlic wild rice- basically rice cooked with saffron and garlic, duh! and creamed spinach- this was the real experiment of the dinner and came out great.
i boiled a little water, then added in a box of frozen spinach-- this didn't look like enough spinach, so i threw in the fresh spinach i had in the fridge... when this was all wilted and cooked, i added salt, pepper and whole bunch of nooch and a spoonful of vegenaise. everyone loved it! delicious! :)

indian couscous
tried a new recipe for dinner tonight: indian couscous :)
sauteed a lil onion and red pepper, then tossed in a lil salt, 1 tsp curry powder, peas, chickpeas, raisins, 1 1/2 c. whole wheat couscous and 2 c. water, brought everything to a boil, removed from heat, then let it mingle for 5-6 mins.
super easy and quite yummy!
buffalo chicken pizza and french onion dip :)
i made another buffalo 'chicken' pizza, here's before and after baking.... i made the dough w/ white whole wheat flour, a 'blue cheese' dressing made out of vegenaise, tahini, cider vinegar, garlic powder and crumbled tofu (this dressing is SOOOO blue cheesey!) and buffalo chicken bits (health is wealth nuggets + frank's red hot), topped with FYH mozzerella
this pizza comes out so greasy and amazing :) yum yum yum
there is a going away party at work tomorrow, so i decided to try out a recipe i found in vegetarian times for french onion dip... (i did not follow recipe very closely, the recipe said to use store bought vegan sour cream, but that stuff is very chemically and weird...)
1. baked 2 sliced onions, that i tossed with olive oil, balsalmic, salt and pepper (450 for 17min)
2. let onions cool off, then chop up
3. made a creamy sauce in the food processor (1 box silken firm tofu, 1/4 raw cashews, 1 tb vegenaise, 1 tsp bragg's liquid aminos, dash onion powder, 1 tb olive oil)
4. then i stirred it all together with 3/4 tsp crushed dried thyme
i tasted it and it is awesome!!! yay! (hopefully it is appreciated at work!)

'chicken' salad sandwich
i've had a nice relaxing weekend, full of cooking! for me, thats the best kind.
this is a yummy sandwich i made the other day: i made a 'chicken' salad with leftover maywah chicken drumsticks, celery, onion, spices and vegenaise, then there's some fakin' bacon on there, and spinach. we used heidelberg french peasant bread. (heidelberg bread is the best, only a handful of ingredients, made in herkimer and DELICIOUS!)

cream of broccoli soup and garlic bread
i made a cream of broccoli soup-- cooked up a chopped onion in a little peanut oil, then added in 2 chopped potatoes. i added in three small heads of broccoli, cut up into little pieces. instead of veggie broth, i used some garbanzo bean cooking liquid that had been hanging out in the freezer. i used enough liquid to just cover the veggies. for spices, i used salt, pepper, onion powder and parsley. this all simmered for about 25 minutes.
i made a small portion of white sauce in another pot, a little earth balance, some white whole wheat flour and soy milk... when this was thick, i added to first pot, and blended the whole thing with the immersion blender.
for the garlic bread, danny made a garlic butter with earth balance and 2 cloves of pressed garlic. we used yummy perreca's bread, buttered it up!, and placed it under the broiler for 3-4 minutes.

goulash dinner
tonight i made a goulash :) whole wheat macaroni, i made a sauce with a chopped onion, thawed-out frozen tofu, a can of tomatoes, some crushed garlic, parsley, basil, oregano, salt and pepper. after i tossed that all together i grated in some follow your heart mozzerella.

southern fried tempeh, mashed potatoes, stuffing, gravy and carrot slaw
i made some southern-fried tempeh, marinated tempeh in soy milk all day, then dredged it in flour, paprika, black pepper and chili powder. i fried the tempeh in oil until crispy.
the stuffing was made from bread cubes i had in the freezer, onion, celery and spices. the stuffing was my mom's standard thanksgiving stuffing recipe, but i was craving it in march :)
the carrot slaw was shredded carrot, raisins, tossed with a little olive oil, apple cider vinegar, cumin, curry powder, salt and pepper

leeky-pea risotto, bbq lentils and steve's yam stew
this is another "lost" night dinner w/friends. i made leeky-pea risotto, i was feeling a bit lazy though so i tried a recipe i found online for baked risotto.
i sauteed an onion and two leeks (chopped) in a little oil, added a couple crushed cloves of garlic, then i added the arborio rice (2 cups) to the pot and cooked for a couple minutes, then i added 5 cups of water, some salt and pepper. i moved the pot into the oven at 400 and cooked for 30 min. when i took it out of the oven, i stirred in a little earth balance, some frozen peas and about a 1/2 cup of water. came out delicious! the baked risotto method isn't quite as creamy as the stovetop version, but really good, and a whole lot lazier!
the bbq lentils were easy too! i cooked the lentils in water on the stovetop for 30 min until cooked, then i added some homemade bbq sauce, and transferred this to the oven to bake along side the risotto.
our friend steve brought over the stew, it was a combination of yams, potatoes, chickpeas in a creamy peanuty sauce. super yummy!

broccoli salad & tomato couscous
i'm slightly obsessed with broccoli salad, we found really nice fresh, 'better than organic' broccoli at the farmers market this weekend, so i had to make some salad with it. (by better than organic, i mean that the farmer says they use NO fertilizer and NO spray, but its too expensive to be certified.. so they can't say organic).
i made the broccoli salad with some toasted pumpkin seeds, chopped onion and baconbits, the dressing was vegenaise, with a little sugar, a splash of apple cider vinegar, salt and pepper. i mix everything together and let it sit in the fridge for a while, then stir in the baconbits at the last minute. came out super delicious, i ate most of the 'leftovers' before they got to the fridge :) :)
the couscous is whole wheat couscous w/ fire roasted tomatoes.
-i fried up a little onion and walnuts, then i use the juice from the can of tomatoes, measure it out until you have enough liquid for the couscous (equal parts liquid to couscous). add the liquid in, then bring to a boil. stir in the couscous, remove from heat, let sit for five minutes. stir in the tomatoes that have been drained, some oregano, salt and pepper, maybe a little olive oil. done!

indian food.. always makes me happy :)
im always happy with indian food. i have no idea how to cook it authentically, but it usually comes out super yummy.
tonight, i tried to make biryani rice w/ a spice mix (national mutton biryani mix) a co-worker gave me. i cooked brown rice in the rice cooker. i fried up some onion, added the cooked rice, some frozen green peas and some of the spice mix. the whole mixture became a bit mushy... not really what i was going for, but still quite tasty.
i made a curry/stew dish also. i fried some onions and garlic w/ chickpeas, tomatoes and winter squash. (canned chickpeas, canned tomatoes and frozen squash). for spices, i used a little cinnamon, cumin, coriander, cayenne pepper, salt and black pepper, at the end i stirred in some light coconut milk.... came out delicious!!!!
i also baked up some frozen samosas that i found in the grocery store, and served them with some mango chutney.
