Vegan MoFo day 3- tempeh tuna melt sandwiches


Here's tonight's dinner... well Chef Bab didn't really help all that much (he's more of an inspirational chef than functional one).

I, Peggy, made tempeh "tuna" melts. The bread is from the other day, the cheez is from Ultimate Uncheese cookbook, recipe --> Gooey Grilled Cheez. This is a great, quick noochy cheez sauce/spread. I also whipped up some tempeh tuna salad. I greased the bread up with some EB, layered on the yummy cheez and the tempeh salad, then grilled in a castiron skillet. I served this with some yummy steamed yellow and green beans.

Tempeh Tuna Salad:
ingredients:
1 block tempeh- steamed and smashed with a fork
splash malt vinegar
1/4 med red onion- diced
1/2 stalk celery- diced
1 Tb sweet pickle relish
1/2 Tb kelp flakes
1 clove garlic- crushed
dash onion powder
salt and pepper
1/4 c (more or less) vegan mayo (I used a combo Trader Joes reduced fat mayo and Vegenaise)

-After steaming the tempeh, I splashed on some malt vinegar and then allowed to cool in fridge before I mixed in all the other ingredients.

Cape Cod-induced seafood cravings solved…. Fabulous Beer-Battered Tempeh “Fish” with vegan Tartar sauce



The hubby and myself recently returned from a beautiful long weekend on Cape Cod. We shared a rental house with a whole bunch of family. We did a lot of pre-planning with food for the weekend, did a big grocery shop at home and brought a lot of easy meals to keep us full and happy. The rest of our family's food plan was to pretty much eat out every meal. Well… we’re broke so that’s definitely not an option, and looking online, the vegan options out on the Cape are a bit minimal. When we got onto the Cape, we saw lobster shack after seafood stop after clam shanty, etc.. and really not much else. We ate very well with the food we brought and didn’t go hungry at all. (We made lots of Tabouli and hummus sandwiches for the beach!)

I had done a bunch of online searches before we left, and the only interesting vegan eating-out options I found were in Provincetown, so we did head out there one day to shop and go out to eat for a romantic date. We checked out this restaurant Karoo Kafe in Ptown, it's website boasted it as vegan, vegetarian and gluten-free friendly. By the time we were done looking around in funky shops and enjoying the positive energy of all people in Provincetown, we found the Kafe and were super hungry. Well, the menu is really big and has lots of options, something I am definitely not the used to as a vegan. I went for the "Cape Town Stew" with tofu and the hubby got a Falafel wrap, we shared some deep-fried Pakora's for an appetizer. The service was friendly, food came out of the kitchen really fast and was quite delicious. The atmosphere was upscale fast-food, order at the counter, not really drawn out-romantic-dinner-type of place. We even tried some Cape Cod-brewed beer there. Yum! We are going to remember the name of that restaurant and try to get out there again.

My hubby had some serious seafood cravings while we were on the Cape. It is really the one non-vegan food that “still sounds good.” He didn’t cave to his cravings (his tummy thanked him for good judgment), and on upon our return home, I dug out a recipe we tried about a year ago that I knew would make him happy and satisfy those cravings.

Veg News had a recipe for Beer-Battered Tempeh “Fish” and tartar sauce in the April 2011 issue. I don’t do any sort of frying/deep-frying very often, but this recipe looked so good that I had to try it when I saw it in the issue. When I made it last year, I remember it came out good, but the batter didn’t quite stay on the tempeh and I had made big tempeh chunks... Looking at the recipe again, I hadn't cut the tempeh nearly as small as called for.

The day after we got home from the Cape, my hubby had to go back to work, but I had an extra buffer day off. He was super bummed to be back at work, so... I decided to extend the vacation to dinner that night and made a Fried “Fish”/Cape Cod feast.

I followed the recipe much more closely this time... making two whole packages of tempeh worth of beer battered/fried deliciousness (for only the two of us lol), I also made some tartar sauce, some coleslaw, picked up some Cape Cod Salt and Vinegar potato chips, little soft potato rolls the perfect size for one “fish” tempeh stick and even found some Massachusetts’s brewed beer at the beer distributor (I couldn’t find any brewed on the Cape, boo!). One change I made to the recipe was steaming the tempeh about 2 hours before dinner and letting it marinate in the fridge until it was fry time.  Veg News marinated only briefly before frying. The frying didn’t even make that big of mess! Yay!

When my hubby got home and saw the spread on the table, he was so happy and appreciative. And I was too when I started eating, this recipe came out even better than last time, the beer-batter was right on, the tempeh had a great tangy, flakey, fish-y texture, the tartar sauce was yum yum yum, the rolls were good, and of course  the chips and beer were awesome!!! I didn't take nearly as many pictures as I should have to show these off... they were too yummy to resist and I enjoyed eating them instead of documenting them. To create this dinner was definitely a bit of work, but I had lots of fun doing it on my last day off.

Disclaimer: I am completely aware this is the essence of a “sometimes food.”

Here are the recipes mostly as printed in Veg News:

for the beer-battered tempeh "fish":
ingredients-
2 packages tempeh, in 1/2 inch slices
1/4 cup malt vinegar
2 Tb agave 
2 tsp Old Bay seasoning

2 c AP flour
1 Tb baking powder
1 1/2 tsp salt, divided
1/2 tsp cayenne powder, divided (I used Indian chili powder)
1/4 tsp garlic powder
1 1/2 bottle organic pale ale (I used 20 oz of Rolling Rock)

3 cups oil, for frying (I used peanut)
1/2 cornstarch  

directions-
1) Steam tempeh for 7 minutes. Remove into bowl.
2) Combine malt vinegar, agave and Old Bay seasoning. Pour over tempeh, and stir gently to coat. Allow to marinade in fridge for an hour or two. (my marinade got completely soaked up by the tempeh)
3) Prepare batter: whisk together the flour and seasonings until smooth. Using whisk, slowly stir in beer until a smooth batter forms. Put in fridge for 10 minutes while you prepare frying stuff.
4) Heat up oil (med-high heat) in a large skillet (mine is cast-iron). Set up frying station: marinated tempeh, a bowl with cornstarch, the batter, and something to put the hot/cooked food in (w/ lots of paper towels).
5) Dredge individual tempeh sticks into cornstarch, shake off extra. Then dip into batter, and allow the big globs to drop off. Then into the hot oil!! Only cook a few at a time to keep the oil nice and hot and, prevent splashes and burning yourself, etc... Cook until you see the batter puff up and get a lil browned,  turn over with tongs, 2 minutes or so a side.
6) Drain on paper towels, then eat while they are hot!


for the tar-tar sauce:
ingredients-
1 1/2 c Vegenaise
5 slices of sweet pickle-minced or 2 Tb relish
5 stuff green olives- minced
2 tsp dried onion powder
1 Tb fresh lemon juice
dash of salt
pinch of chili powder

directions-
1) Combine together.
2) Slather all over tempeh "fish."





*Bonus/Exciting News*

So this recipe makes a ton (a TON!) of “fish”, definitely at least enough for 6 or more people. I was a bit puzzled with what to do with leftovers. I did some Google searches for “how to store fried food” “can you freeze fried food”, etc… Basically everything I saw online said that batter fried foods can’t be stored, eat them right away or they are gross. I was NOT going to waste all this yummy “fish”!! So I took the cooled “fish” put it in plastic freezer bags and hoped for the best.

Well, we were hungry for an easy dinner the other night and I took out some of the frozen “fish” and attempted to reheat in an cast-iron skillet, it worked awesome, the batter got crispy, the “fish” was hot and maybe even tastier than the first time. I used my well-seasoned cast-iron, (added no oil, this stuff is fatty enough!) heated it up on medium heat, then simply put the frozen pieces right in, I turned them and cooked on all four sides, until hot and a little browned.  (Take that Google, you don’t know everything!)

just talking 'brout bread..

So... I'm feeling alive again, and focusing on being less stressed, and being happy. There are many things that make me happy and I live with these cute lil furry ones that make me SO happy.  I thought I'd share their adorable faces with you.. I have another kitty too, she was hiding behind a curtain, and utterly unphotogenic when I was in the mood to take pet-pictures.

I'm trying to post more.. and thought I'd share more recent food.. :)
serious salad and spicy peanut spirals
This here is a nutritious dinner with a salad made by me, and spicy peanuty spiral noodles made by the hubby. He used my standard peanut sauce recipe and combined that with some whole wheat rotini noodles.

I made little side salads with shredded cabbage, avocado, shredded carrot, cucumber slices, red pepper with homemade scallion balsamic-vinaigrette dressing.

I'm always happy with tasty peanut noodles, and felt full of goodness from all the raw veggies.
 The other day I made some tempeh cakes.. I was going for a "crab cake" type creation. They kind of fell apart while cooking, but tasted really good. Steamed, crumbled tempeh combined with red pepper, celery, scallions, breadcrumbs, vegenaise and Old Bay seasoning. Formed patties, then fried. Ugly, but yum.

With all that yummy food in my life, the thing that made me the most excited was this loaf of Spelt-Whole Wheat bread. I found the recipe on one of those forums I posted the other day. The recipe called for oatmeal flakes, but I didn't have any... I did, however, have recently acquired Spelt flakes that I've been wanting to use, so I substituted those.  This bread took the same amount of work any other bread in the breadmachine takes... MINIMAL! but the outcome was really satisfying.

The bread is nutty tasting, soft in texture, super high in protein and fiber,  and still firm enough for slicing and sandwich making. This is definitely keeper of a recipe.

thai lettuce wraps and massaman curry


So.. I made this yummy dinner and I thought I would share with y'all. I have been less than motivated to blog recently. Mostly... when I cook yummy dinners, I just want to eat them and I'm too lazy to take pictures :)

This is a very Thai inspired dinner... authentic? Of course not! The lettuce wraps were a memory from a dinner at PF Changs. I looked on vegweb.com for a recipe.. found this one --> here, but definitely didn't follow it very closely. Here's what I did: (Came out DELICOUS!!!!!)


Thai Lettuce Wrap:

ingredients:

2 packages of mushrooms (white button and porcini)-chopped
1 package tempeh-cut into chunks
2 cloves garlic- minced
1 small chunk ginger- minced
1/2 c. lemongrass broth (2 tb dried lemongrass soaked in hot water, then strained)
good squirt sriracha
2 Tb peanut butter
2 Tb Bragg's- more to taste
1 head Boston lettuce 
sprouts

-In castiron skillet, med heat, add lemongrass broth, then garlic and ginger. Cook for a couple minutes then add mushrooms and tempeh and other ingredients. Cook until mushrooms are soft and mixture is moist.
-Serve in crispy lettuce leaves. We topped ours with some sprouts for added crunch




massaman curry

Massaman curry is my ABSOLUTE favorite Thai curry to get at restaurants (potatoes, peanuts and tofu? hell yes!). I got an email from VegNews with a homemade version and decided to try it. Here's a link to the --> recipe. It was definitely yummy, but needs some work. My hubby realized that there were no red peppers in the recipe, but there usually are at our favorite Thai restaurant, and I think it would have benefited from some. Since I made this for guests, I doubled the recipe... and ended up added 4 limes worth of juice to it.. The lime was way overwhelming, still tasty curry, but really really tangy. So, I think I'm going to have to tweak this recipe for a perfect at home Massaman curry.

Dinner was enjoyed by all, and the Hubby would like Thai lettuce wraps everyday.

the vegan ELVIS sandwich :)

this is what i made my hubby for lunch today. an epic elvis-inspired sandwich (served with a lil cup of amy's no-chicken noodle soup!)

Vegan Elvis sandwich:
 
ingredients:

-2 pieces of bread
-crunchy peanut butter
-banana
-tempeh bacon (homemade of course! recipe --> here)

1) fry the tempeh bacon,
2) construct epic sandwich
3) cook in cast iron skillet til crispy and hot
4) eat! yum yum yum

vegan crabby patties

There's been a serious lack of posting on here lately, we just moved into our first house, and we've been busy and frazzled. I've been cooking lots of yummy things, but too lazy to take pictures before I eat. I made these crabby patties the other day, and they were too cute and yummy to not share with y'all.

So... back in my pre-veg days, I definitely had a weakness for crab cakes. I've seen lots of recipes online for vegan versions, but hadn't gotten around to making them until this week. I found this recipe , on the super reliably delicious theppk.com. I followed the recipe pretty exactly, and used the suggested kelp flakes, for extra fishy-ness.

These came out super super yummy! The hubby and I are always happy with tempeh, and this is such a great use for it. They came together really easy, and once cooked, they disappeared within minutes. I'll be making them again real soon :)

i made some cheez!

Last weekend, I decided to make some firm cheez, from The Ultimate Uncheese Cookbook, I've seen other bloggers rave about the Colby Cheez, a firm cheez, good for crackers and grilled cheez sandwiches. I gathered all the necessary groceries for the recipe, the only weird one was agar powder. I've never used agar before, so I wasn't sure what to expect. I followed the "Chedda" suggestion, at the bottom of the Colby recipe. The recipe was pretty simple to follow, and didn't take very long. I decided to throw some chopped walnuts in the bottom of the dish, to make the cheez look a bit fancier :) And, it sure looked fancy!

So I brought this cheez to a family party, and served it with some crackers. The flavor was really quite nice and cheezy. The flavor was perfect with crackers, my only complaint was the texture, it wasn't perfect to me, a bit... gelatinous... I'm not sure if this is because I boiled the agar for too long. The directions said cook until completely dissolved, I didn't really see a change in the mixture that would be undissolved/dissolved. Alot of the cheez got eaten (by a bunch of non-vegans for the record). I think I'll attempt another cheez with agar, and see if I like the texture any better.

With the leftover cheez, we decided to make some cheezy-broccoli rice. I made a sauce with some plain almond milk, a splash of bragg's, a squirt of mustard, a lil sriracha and the rest of the cheez, all shredded up. I let the mixture come to a bubble, the cheez melted in completely. Then we added in some chopped frozen broccoli, and leftover white rice from Chinese delivery. This mixture came out GREAT! We definitely preferred the cheez this way :) We served it with some hot sauce glazed tempeh courtesy of The Veganomicon, and some steamed cabbage.

Vegan MOFO day 10- Lunch To-Go

Tonight's dinner was a seriously boring one, so I didn't feel like blogging about it. I was home alone without the hubby, and I never do very good cooking anything special if I don't have anyone to cook for...

After I ate my dinner, I got a flash of inspiration to get the hubby's (and my) lunch ready for tomorrow. Danny is a pretty serious tempeh fan, so I figured I'd make him a tuna-ish tempeh salad sandwich. I didn't use any sort of recipe, just kinda threw a bunch of yummy stuff together. I think the end product will make him happy at lunchtime tomorrow

tuna-ish tempeh salad
ingredients:
1 block tempeh
1/4 red onion- finely diced
sweet relish (~2-3 T)
kelp flakes- a couple shakes
kalamata olives, chopped (~2 T)
pumpkin seeds, chopped (~1 T)
salt and black pepper
vegenaise (~ 1/4 c)

-i steamed the tempeh on the stovetop for about 15 minutes, then i smashed it up with a fork.
-i combined all the ingredients in a bowl, i didn't really measure anything... then i moistened it up with vegenaise and put it on bread for a sandwich

I packed the hubby's lunch up in our cool To-Go Ware two-tier. I packed up some cut up carrots, a honeycrisp apple, a Larabar and some walnuts. I'm good to the boy :) My lunch wasn't as cute in the To-Go Ware three-tier, so I'm not gonna show it to you...

Vegan MOFO day 9- Taco Tuesday!

Today is Tuesday, so we decided to have tacos. We mostly used the 'Baja Tempeh Taco' recipe out of the Veganomicon. We didn't make the suggest lime-creme, and I made the cabbage slaw a lil different, I didn't use jalapenos, and I added a lil dollop of vegenaise. I'm not very good at sitting right to recipes. We stuffed organic blue corn taco shells w/ chili-Beer marinated tempeh, a spicy cabbbage slaw, some salsa, and our friend Kaitlin made a pineapple guacamole! Seriously yum :)

Vegan MOFO day 6- Tempeh bacon and avocado breakfast sammy

A delicious, warm, hearty breakfast sandwich on a brisk fall day. Threw some frozen sesame bagels (just make sure your bagel is vegan) in the toaster oven, spread some Earth Balance, and stuffed with tempeh bacon and sliced avocado. Super tasty and filling!

Vegan MOFO day 1 - "Steak" and potatoes a la hubby

The name of this blog is Vegan Yummy by Peggy (in case you forgot). Yet tonight's entry *GASP* is brought to you by me, Danny (aka "hubby" in previous posts). Peggy had a tough day and I wanted to cheer her up, so I decided to cook up some yummy (heh) marinated tempeh and baked potatoes. I kinda doctored a recipe I found in the Veganomicon and made my own vegan equivalent of a hearty steak-and-potatoes feast.

Tempeh "Steak"
1 (8-ounce) package 3-grain tempeh
3/4 c. red wine (I used leftover cabernet sauvignon.. thanks Elissa!)
2 Tbsp bragg's liquid aminos
2 Tbsp bragg's apple cider vinegar
2 Tbsp liquid smoke
2 Tbsp olive oil
2 Tbsp pure maple syrup
3 cloves crushed garlic

I started by slicing the tempeh in half width-wise, then again into triangles. I DO love me a good triangle. This yielded 4 hearty triangles. Bring a medium-sized pot of water to a boil, then lower to a simmer. Drop those triangles on in! Wait 10 minutes. What to do? Read a short story? File your taxes? No! Whisk together above marinade ingredients in a bowl large enough to fit 4 triangles of tempeh.

The tempeh plumped up quite nicely in the 10 short minutes. I let it soak for about 90 minutes, turning occasionally. Meanwhile....

Potatoes take forever. I threw these in the oven like, last week. Just kidding. Probably the same 90 minutes at around 350F. Not C. That'd be CRAZY hot. When they were done I topped them with a little Vegenaise and "bacon" bits.

Back to the land of tempeh "steak". Fry em up in a little peanut oil in a cast-iron skillet over medium/medium-high heat. Took about 10 minutes, turning occasionally and drizzling with remaining glaze.

Oh. I steamed some broccoli too, garnished with a little nooch. This whole meal was awesome. One might even say... YUMMY! And it made Peggy happy. :)

roasted golden beets and fingerling potatoes with spicy tempeh


Well.. I bought some golden beets at the Greenmarket last sunday. Years ago, I ate some dish made with golden beets when my brother was a student at the Culinary Institute of America. (I got to eat lots of yummy vegetarian food in their restaurants while he went to school there yum yum!) Now.. I've always loved beets, but damn golden beets are amazing!!

I have never spotted golden beets at the Greenmarket or at Hannaford before. So when I saw these beauties at the market, I had to grab them up! We also bought some amazing fingerling potatoes from an adorable little girl. Her family has a little stand, and they sell no-spray heirloom beans, potatoes, and garlic. We bought a bunch of varieties of cute lil potatoes, some red ones, some yellow ones, even some blue ones.

For dinner tonight, the hubby and I used some teamwork. He cut up the potatoes and the beets, and tossed them with some olive oil, salt, pepper, crushed fresh garlic, thyme and a lil Spike seasoning. We baked them for about an hour at 400. I added some red onion to the pan about half way through.

We also made some baked tempeh. We cut the block of tempeh up into triangles, steamed them for like 10 minutes. Then I coated them thoroughly with Frank's RedHot and a lil peanut oil. They needed to bake for about 2o minutes.

This dinner came out really yummy, and was totally satisfying. I love tempeh, it's so hearty. I like dinners when I have an excuse to use a steak knife (I could definitely have just cut the tempeh with the side of my fork, but I used a steak knife anyway!)

tempeh reuben sandwich & marinated zucchini salad

This was a quick dinner I made for my husband :) It's a tempeh reuben sandwich, for the tempeh: I used tempeh bacon that I had marinating in the fridge, layered with sauerkraut, and dressing (vegenaise, horseradish and ketchup). The bread is Heidelberg Rye :) yum yum. The salad is thinly sliced zucchini and fresh garlic marinated in a vinaigrette for a couple hours.

The hubby says "that was bangin!"

mashed taters, smokey tempeh and corn on the cob!

This is tonight's dinner. It starts with the fresh corn we found at the farmer's market this morning! I love fresh corn :) The farmer's market was wonderful today, so many people out, and so much variety in the produce. We brought our friend Kaitlin, and we all had a fabulous time. We got some spicy pad thai for lunch from the thunder mountain curry booth. I love them because they ALWAYS have something vegan and yummy. In addition to the corn we had smokey tempeh from the Veganomicon. And some super yummy mashed potatoes. For flavor: I mashed in some vegenaise, horseradish, onion, garlic, soy milk, salt and pepper and fresh chopped parsley.
Dessert was: Tofutti Marry Me bars. Oh my, are these delicious!!! Just like the fudge bars I remember.... and a nice cool down on a hot and humid summer day!

breakfast muffin sandwiches!!!!

I made some sausages with the Vegan with a Vengeance. Tempeh-Bean sausages, yum yum yum. Right when they were done cooking, I added a drizzle of maple syrup. We ate them on 12 grain english muffins with some avocado! Good breakfast!

Taco Tuesday!

We had a super fantastic taco night last night! :) I used recipes from the Veganomicon to make baja marinated tempeh, spicy slaw and mexican millet. I didn't follow any of the recipes exactly, but I used the general idea and everything came out super yummy. Other ingredients in our awesome taco bar included some Newman's Own salsa, Guacamole (courtesy of awesome neighbor Leah), Organic Blue Corn Taco shells and Daiya Cheddar cheese (courtesy of awesome friend Kaitlin). We were all very happy with our tacos!

Oh oh oh! I also made a Cilantro-Lime Creme for the tacos, I made this up myself and I thought it was a key topping :)

ingredients:
1 box silken extra firm tofu (the cardboard box kind, not water packed)
1 Tb olive oil
juice of 1 lime
dash apple cider vinegar
1 tsp sugar
1 tsp salt
1/4 cup fresh cilantro

-blend everything until really creamy, i use an immersion blender for several minutes

tempeh bacon! yum yum!

1) Cut 1 block of tempeh in half, then slice into thin strips

2) Marinate tempeh strips in smoky-maple marinade

ingredients:
4 Tb Bragg's liquid aminos
1 clove garlic- pressed
1 Tb maple syrup
1/4 tsp liquid smoke
2 tsp tomato paste

(whisk ingredients together, and add tempeh, marinate for a couple hours, or leave in fridge for a couple days)

3) Fry marinated tempeh strips in a castiron skillet :)



Bacony breakfast sandwich :) Whole wheat bread with lots of EB :) :)
